General names

The following is based on analysis of dictionaries and other sources. Comments and corrections are welcome.

The Vietnamese word for the grebe is Le hôi or Chim le hôi. The word is related to Le meaning 'teal'. Unmarked, Le hôi is used by naturalists to refer to the Little grebe (Podiceps ruficollis).

The name of the family (Chim lặn) means 'diving bird'.

An alternative word for 'grebe' is Chim ba nhíc. This can also be seen in the form Bánh ít, which appears to be a kind of folk reformulation of the name -- the bánh ít is a kind of three-cornered pattie eaten in Vietnam!
