General names
The following is based on analysis of dictionaries and other sources. Comments and corrections are welcome.
Note on Vietnamese naming: With the exception of ducks and chickens, it is common for Vietnamese bird names to be preceded by the word Chim meaning 'bird', although it is normally omitted in Vietnamese bird lists. All bird names, whether they include chim or not, can be preceded by the classifier con, which is used for living creatures.
Bustards are known in Vietnamese as Chim sấm (which literally appears to mean 'thunder-bird') or Gà sếu 'crane fowl', although neither name is widely found in dictionaries. Other sources online and off give Chim bảo (from Chinese 鴇 'bustard') and Chim ôtit (from the Latin). The second, in particular, appears to be contrived to fill a gap.
The only member of the bustards found in Vietnam is the endangered Bengal Florican (Eupodotis bengalensis), named by ornithologists Ô tác, which is clearly from French outarde 'bustard'. The species is found in the south of Vietnam and neighbouring Cambodia.
